Today I made pumpkin fries!

Photo Caption: Today I made pumpkin fries! Since Google says pumpkin has 8 g of carbs per cup, this is a great alternative to your regular french fries. I’m going to have to play around with the recipe a little bit more because they didn’t come out as crispy as I would’ve liked them to, but they still tasted awesome; which I was surprised!Finding pumpkin this time of year was a little bit difficult but when I walked in the whole foods they had baking pumpkins sitting there. I grabbed a medium size one and was able to make pumpkin fries out of half of it, pumpkin cheesecake out of the other half, and pumpkin seeds I roasted. Pretty cool to use the entire pumpkin to make a bunch of keto treats!

I cut half of the pumpkin after peeling it, into fries. I soaked them in water overnight, I dried them with a paper towel and then I dusted a couple teaspoons of cornstarch on the whole entire batch in a big ziplock bag to hopefully help it be crispier out of the oven. I laid them on parchment paper not touching each other and then put them in the over at 425 for 15 minutes flipping them about halfway through. After I pulled them out of the over, I dusted them with salt and grated Parmesan; yum!!!
