I did another Box Opening vid after hiking up and down @skieaglepoint the other day.. People ask me all the time about my energy level on keto. And I am proof that the keto diet gives you plenty of energy. KETO CARROT CAKE! While not the prettiest things ever, damn they taste good!! Still working on the aesthetics! This time I used Allulose instead of Swerve (I ran out mid cake!) in the frosting and it came out less granular.. will make the switch going forward! I posted a Lemon Poundcake recipe a few weeks ago from @the_modified_mama and just had to make these mini bundt cakes with it! Each cake is 2 servings and all my friends LOVE them!! —— This makes a total of 16 servings of pound cake. Each slice comes out to be 254.19 Calories, 23.4g Fats, 2.49g Net Carbs, and 7.9g Protein. Don’t be afraid to half the recipe (it makes a lot) or cook in smaller pans and freeze some (just watch cook times). Don’t like lemon, just use vanilla, or almond extract. It comes out JUST like pound cake!!!
