I made bagels today!! I tried to get a doughnut pan and ended up with a mini bundt cake pan instead.. oh well, they looked and tasted wonderful!! I grew up eating bagels with strawberry jam and cream cheese so I’m absolutely thrilled to be able to again, and keep it under 4g (including the strawberry jam!) —— 1 cup almond flour 1 egg 1 tsp Xanthan Gum 1.5 cups Mozzarella Cheese 2 Tbsp Cream Cheese —— Preheat over to 400. Beat the egg and then fold in Almond Flour and Xanthan Gum till fully mixed.. Make sure to finish this step prior to mixing the mozzarella and cream cheese in a microwave safe bowl and then heating 1 minute at a time until melted.. combine the two bowls and mix completely; I finished by mixing with my hands.. I sprayed my pan with coconut oil spray and sprinkled sesame seeds into each spot.. I didn’t evenly distribute the dough so I ended up with 5 bagels instead of 6.. I sprinkled more sesame seeds on top of the dough and then put in the over for 15 minutes. Mine might have stayed and extra minute which made them all brown and toasty… but I sliced while still warm and spread on some cream cheese and then sugar free strawberry spread.. without the spread, the bagels should be about 2g carbs each.. with it, they should be about 4g net carbs… I’m a happy camper with this easy recipe

Last night I had dinner at a Mongolian Hot Pot restaurant here in Vegas called @chubbycattle… I love to get the mushroom basket and beef combo which you cook in your own soup hot pot in front of you. If you want any extras you just grab them off the conveyor belt in front of you! Such a fun and very KETO dining experience

So we have this super fun restaurant in Vegas called @HotNjuicyLv and going there for lunch or dinner is TOTALLY KETO! I had a pound of steamed shrimp covered in butter and spices as well as FRESH MADE pork cracklin’s! NOTE: you eat with your hands so prepare to get messy! OTHER NOTE: dip the cracklin’s in your butter for extra flavor

Wow!!!! Can’t wait to make these!! —— Repost @cheeseisthenewbread ・・・ You’ve seen the supreme chicken chalupa (my favorite), and here is the beef-y nacho chees-y version! . As the toppings are all to taste and not part of a whole recipe, the macros and directions below are only for the chalupa shells and queso/nacho cheese sauce. . To make the shells, preheat oven to 350°F. In a medium size bowl, combine 1½ cups mozarella and 1 egg. Stir to combine. Microwave mozarella and egg for one minute. ??No, this does not cook the egg.?? Add ¾ cups almond flour to the melted mozarella and egg mixture. Stir to combine. Separate dough into 4 portions and roll out into circles. Bake 15 minutes. Heat ¼ cup bacon grease (or oil) in a small pan on medium-high. Add chalupas to grease (or oil), fry 1 minute per side or until desired crispness. Tried out a new place in town, a Mongolian Hot Pot restaurant called @chubbycattle on Valentines day with my girls; we laughed so hard we cried… it was an awesome time.. I think I could go back just for the mushroom variety they had but they had an awesome selection of meats to cook in your own individual hot pot… I woke up fully in ketosis because I was able to put together my own sauces at their sauce bar… I’m a fan

I saw carrot cake when I was at Texas De Brazil the other night and I just needed to have some so made this 275 calorie, 26.5g fat, 5.5g net carbs, 9g protein per piece carrot cake (18 pieces in this recipe). I used my fitness pal to get those so the actual amounts may differ… I ate way more than one piece yesterday and my glucose levels today were 79 mg/dL and ketones .6… My gluten free friends LOVED it… so thrilled about this recipe; Try it out and let me know what you think! —— For the Cake: 2 cups almond flour 3/4 cup coconut flour 4 tsp baking powder- gluten free 1 tsp baking soda 3 tsp ground cinnamon 1 tsp ground nutmeg 1/2 tsp ground cloves 1/4 tsp salt 6 large eggs 1 1/4 cups swerve 1 stick unsalted butter, melted 1 1/4 heavy cream 1/4 cup water 1 pound carrots unpeeled, grated Optional: 1 cup crushed walnuts (increases all macros by a LOT) —— For the Cream Cheese Frosting: 8 ounces cream cheese, softened but still cool 5 tablespoons unsalted butter, softened but still cool 1 teaspoon vanilla extract 3/4 cup swerve —— Cake: Preheat oven to 350 degrees Grease a 9″ x 13″ rectangular baking pan with butter. Combine almond flour, coconut flour, baking powder, baking soda, cinnamon, nutmeg, cloves, allspice, and salt in a medium bowl. In a large bowl, beat eggs until well beaten. Add swerve, butter, and milk. Add flour mixture and mix thoroughly. Fold in Carrots with a rubber spatula or wooden spoon, until the mixture is fully combined. Transfer batter to prepared pan and bake until center of cake is firm to the touch, about 40-45 minutes. Let cake cool completely before frosting, otherwise frosting will melt —— frosting: Using a hand-held mixer, beat cream cheese, butter, vanilla, and swerve on low speed until mixed. Increase speed to medium and beat until slightly fluffy, about 2-3 minutes
