No clue what to have for dinner? Keep calm and curry on ? ok I’ll leave the food puns to the pros BUT you can trust my food, especially when it’s as good as this shrimp curry ???served keto (with cauli rice) and non-keto (Bryan’s had brown rice)

✔️1 lb shrimp (peeled and deveined)
✔️3/4 cup light coconut milk ✔️1 tbsp ghee ✔️4 campari tomatoes (small chop, like in a food processor tiny)
✔️1/2 serrano pepper (chopped)
✔️1 large garlic clove (minced)
✔️1/4 onion (chopped)
✔️1 tsp curry powder (more or less to taste)
✔️1/4 tsp cumin powder ✔️cayenne pepper to taste ✔️salt and pepper to taste
✔️chopped scallions ▶️ in a pan with a bit of avocado oil sautee the onion, garlic and tomatoes for 5-7 minutes. ▶️ Add in the spices and coconut milk. ▶️cook for 10 min. ▶️ Add the shrimp and cook for 3-5 min or until done. ▶️Add in the ghee and serve over cauli rice.
