Today I made pumpkin fries!

Photo Caption: Today I made pumpkin fries! Since Google says pumpkin has 8 g of carbs per cup, this is a great alternative to your regular french fries. I’m going to have to play around with the recipe a little bit more because they didn’t come out as crispy as I would’ve liked them to, but they still tasted awesome; which I was surprised!Finding pumpkin this time of year was a little bit difficult but when I walked in the whole foods they had baking pumpkins sitting there. I grabbed a medium size one and was able to make pumpkin fries out of half of it, pumpkin cheesecake out of the other half, and pumpkin seeds I roasted. Pretty cool to use the entire pumpkin to make a bunch of keto treats!

I cut half of the pumpkin after peeling it, into fries. I soaked them in water overnight, I dried them with a paper towel and then I dusted a couple teaspoons of cornstarch on the whole entire batch in a big ziplock bag to hopefully help it be crispier out of the oven. I laid them on parchment paper not touching each other and then put them in the over at 425 for 15 minutes flipping them about halfway through. After I pulled them out of the over, I dusted them with salt and grated Parmesan; yum!!!

I went in to pick up sugar free @lilys_sweets_chocolate chocolate chips so I could make some muffins or cookies and ended up grabbing @flackerscrackers rosemary crackers, @sunbutter sunflower butter, @rhythmsuperfoods kale chips, and @cbs_nuts pumpkin seeds! All each had 2 or less net carbs per serving. When you’re about 17g of carbs a day, snacks like these can really help!

I keep all the salad makings in my fridge…

Photo Caption: I keep all the salad makings in my fridge for when I’m lazy and I don’t feel like cooking.. yesterday I grabbed a roast chicken at the store for 5.99… I keep hearts of romaine in the fridge although spring mix or kale/spinach is probably a better choice as far as nutrients go.. a little bit of red onion, mushrooms and then some blue cheese, topped with Blue Cheese dressing. The dressing I get has 1g of carbs per serving and I figure I probably use 2 servings… it fills me up!!!

I’ve been really wanting to try out one of these Bacon wrapped…

Photo Caption: I’ve been really wanting to try out one of these Bacon wrapped Avocado with poached eggs!! I think this week might be the week! Who has tried it out? Well here’s the recipe!!

INGREDIENTS:
1 extra-large avocado
1 medium-sized egg
7 strips bacon
DIRECTIONS:

Toss your egg in simmering water for six minutes, then transfer it into a bowl of ice water. Slice the avocado in half and remove the skin carefully (you’ll want the green stuff to maintain its shape). Pull out the pit to make a little egg hole (you can scoop more if the pit hole is too small).
Peel your egg carefully and drop it in the center of the avocado, then put the two halves together.
Lay five (more or less, depending on the avocado size) strips of bacon side-by-side and roll that avocado up in the good stuff.
Take two additional slices of bacon and roll them around the top to seal it all off.
Fry the thing in a pan, starting with the loose ends of the bacon to make a seal. Turn it around constantly so it’s cooked evenly, then cut it open and dig in.

Did you know that Walmart sells a zucchini noodle maker for $15???

Photo Caption: Did you know that Walmart sells a zucchini noodle maker for $15??? So for under $20, you can get started making yummy carb free dishes like this!! All these ingredients I picked up at Walmart!

2 zucchini
1/2 bag of medium size frozen shrimp
Packet of Pesto mix (follow instructions to make- all you add is olive oil & water)
Portobello Mushrooms sliced
Butter
Minced Garlic

I use two different pans to prepare although you can use one. I get the pesto sauce started and then I sautéed the zucchini in butter and garlic.. I do the same with the portobellos in a second pan (because I’m impatient and want to eat this yumminess asap!) I also want to pour off the extra liquid that comes from the zucchini noodles.. in a colander, I run COLD water over the shrimp to defrost them, and then throw them in the garlic and butter with the portobellos… I toss the zucchini noodles with the pesto sauce and plate it!! Yum! Whole thing should take less than 30 minutes and you have a bunch of low carb goodness!!
