—- This makes a total of 16 servings of pound cake. Each slice comes out to be 254.19 Calories, 23.4g Fats, 2.49g Net Carbs, and 7.9g Protein.

Don’t be afraid to half the recipe (it makes a lot) or cook in smaller pans and freeze some (just watch cook times). Don’t like lemon, just use vanilla, or almond extract. It comes out JUST like pound cake!!! Pound cake

2 ½ cups almond flour
½ cup unsalted butter, softened
1 ½ cups erythritol
8 whole eggs, room temperature
1 ½ teaspoons vanilla extract
½ teaspoon lemon extract
½ teaspoon salt
8 ounces cream cheese
1 ½ teaspoons baking powder

Glaze

¼ cup powdered erythritol
3 tablespoons heavy whipping cream
½ teaspoon vanilla extract

1. Preheat oven to 350°F. Toss in room temperature butter, softened cream cheese, and erythritol into a mixing bowl.
2. Cream together the butter and erythritol until smooth. Then, add in softened chunks of cream cheese and blend together until smooth
3. Add in the eggs, lemon extract,and vanilla extract in with the blended ingredients. Blend with a hand mixer until smooth.
4. In a medium sized bowl: mix together the almond flour, baking powder, and salt.
5. Slowly add in the ingredients from the medium sized bowl into the batter. Use a hand blender to blend the clumps until very smooth.
6. Pour batter into a loaf pan. Bake for 60 – 120 minutes at 350F or until smooth in the middle when tested with a toothpick. If creating a glaze: blend together the powdered erythritol, vanilla extract, and heavy whipping cream until smooth. Wait until the pound cake is fully cooled from the oven before spreading the glaze on top.

No clue what to have for dinner? Keep calm and curry on 😂 ok I’ll leave the food puns to the pros BUT you can trust my food, especially when it’s as good as this shrimp curry 🍤😋🔥served keto (with cauli rice) and non-keto (Bryan’s had brown rice)

✔️1 lb shrimp (peeled and deveined)
✔️3/4 cup light coconut milk ✔️1 tbsp ghee ✔️4 campari tomatoes (small chop, like in a food processor tiny)
✔️1/2 serrano pepper (chopped)
✔️1 large garlic clove (minced)
✔️1/4 onion (chopped)
✔️1 tsp curry powder (more or less to taste)
✔️1/4 tsp cumin powder ✔️cayenne pepper to taste ✔️salt and pepper to taste
✔️chopped scallions ▶️ in a pan with a bit of avocado oil sautee the onion, garlic and tomatoes for 5-7 minutes. ▶️ Add in the spices and coconut milk. ▶️cook for 10 min. ▶️ Add the shrimp and cook for 3-5 min or until done. ▶️Add in the ghee and serve over cauli rice.

Keto BBQ Brisket Pizza!!!

I didn’t have time or desire to create the make the brisket so I went to my local barbecue spot and ordered brisket burnt ends without any sauce on them. I went home and I created a cauliflower crust which was super easy to do, recipe below! I spread the @ghughessugarfree hickory BBQ sauce on the crust, red onions, and layered mozzarella cheese on it, then put the brisket on top and drizzled BBQ sauce over it… in the oven at 400 for about 10 minutes (it was already hot from cooking the crust!!)

2lbs cauliflower, riced (use a food processor)
1/3 cup goat cheese
1 egg beaten
1 tsp dried oregano
Pinch of Salt
A bit of coconut flour as needed

Preheat the oven to 400 and then run your cauliflower through the food processor.. Fill a large pot with an inch or so of water and drain into a fine mesh strainer. Transfer to a clean towel (I used a flour sack) and wring ALL THE WATER OUT!!! This is important for a crispy crust!! Be careful of burning your hands! Mix with the rest of the ingredients. Mine came out a bit wet so I added a little coconut flour to dry it out; but not to dough consistency, it was still a wet dough. Press out into pizza dough shape on parchment (not wax) paper using your hands; I made mine rectangular.. bake for 35-40 minutes until golden brown.. and then cover with toppings, slice and serve!!! Dang, you’re gonna love it!!!
