These were inspired by @ketogenicgirl fat bombs. Tastes just like a Reese’s cup – at least to me. I made small batches for portion control – they were sooooo good!! To make:
– Heat 4 tbsps. of coconut oil in a sauce pan
– Once completely melted, turn off heat
– Add 66 grams of
@lilys_sweets_chocolate chocolate chips, 1 tsp of vanilla, 1-2 tbsps. of @swervesweetie (I use the powdered) and stir until chocolate is completely dissolved
– Fill six silicon muffin cups (or you can use ice cube trays) with half of the melted chocolate
– Drop approx. ¼ of a tbsp of peanut butter (I used @wholefoods @365bywholefoods no sugar added creamy peanut butter) in the chocolate mixture
– Stir in the peanut butter a little, then pour the rest of the melted chocolate over
– Freeze!

I love a good ribeye…

Photo Caption: I love a good ribeye, it’s my favorite cut.. People tend to love filet but I’m not sure they really understand why… Filet is soft and tender but rarely has the flavor of a ribeye because it has no fat.. marbling of fat in a ribeye is what makes it so amazing and that’s the best thing on a keto diet… I didn’t have a ribeye choice on room service while working on my lunch hour so I opted for the New York.. note to self: no more New York Strip! I didn’t eat the carrots!

Photo Caption: Since I’m out running around and working all day, stopping at a Greek place was a good way to stay on diet… I got extra salad instead of rice and won’t be indulging in the tomatoes… the lamb is amazing and the tzatziki sauce is so yummy with it!

No frills, but I made a Keto pumpkin cheesecake…

Photo Caption: No frills, but I made a Keto pumpkin cheesecake the other day…. I used allulose which isn’t as sweet as sugar so I should have added more of it… I also made the pumpkin purée from scratch (along with pumpkin fries and pumpkin seeds- nothing wasted!) so here’s the recipe below! I just made a crust from almond flour; I googled for a basic recipe! ——
1 cup sugar (allulose 1 1/3 cup)
3 (8 ounce) packages cream cheese
1 teaspoon vanilla
1 cup pumpkin
3 eggs
1⁄2 teaspoon cinnamon
1⁄4 teaspoon nutmeg
1⁄4 teaspoon allspice

In a large mixing bowl combine the cream cheese, 1 C sugar, and vanilla.
Mix with an electric mixer until smooth.
Add the pumpkin, eggs, cinnamon, nutmeg and allspice and continue beating until smooth and creamy.
Pour the filling into the pan.
Bake for 50-60 minutes-
The top will turn a bit darker at this point.
Remove from the oven and allow the cheesecake to cool. Refrigerate, slice and enjoy!

Today I made pumpkin fries!

Photo Caption: Today I made pumpkin fries! Since Google says pumpkin has 8 g of carbs per cup, this is a great alternative to your regular french fries. I’m going to have to play around with the recipe a little bit more because they didn’t come out as crispy as I would’ve liked them to, but they still tasted awesome; which I was surprised!Finding pumpkin this time of year was a little bit difficult but when I walked in the whole foods they had baking pumpkins sitting there. I grabbed a medium size one and was able to make pumpkin fries out of half of it, pumpkin cheesecake out of the other half, and pumpkin seeds I roasted. Pretty cool to use the entire pumpkin to make a bunch of keto treats!

I cut half of the pumpkin after peeling it, into fries. I soaked them in water overnight, I dried them with a paper towel and then I dusted a couple teaspoons of cornstarch on the whole entire batch in a big ziplock bag to hopefully help it be crispier out of the oven. I laid them on parchment paper not touching each other and then put them in the over at 425 for 15 minutes flipping them about halfway through. After I pulled them out of the over, I dusted them with salt and grated Parmesan; yum!!!
