Pizza night last night w/ @drewskis!! Would you believe he had never heard of a cauliflower pizza crust? He made a homemade Alfredo for this and we covered it with a rotisserie chicken, baby Bella’s, onions, mozzarella and green onions on top… it was extremely rich but oh so yummy!! —— 2lbs cauliflower, riced (use a food processor) 1/3 cup goat cheese 1 egg beaten 1 tsp dried oregano Pinch of Salt A bit of coconut flour as needed — Preheat the oven to 400 and then run your cauliflower through the food processor.. Fill a large pot with an inch or so of water and drain into a fine mesh strainer. Transfer to a clean towel (I used a flour sack) and wring ALL THE WATER OUT!!! This is important for a crispy crust!! Be careful of burning your hands! Mix with the rest of the ingredients. Mine came out a bit wet so I added a little coconut flour to dry it out; but not to dough consistency, it was still a wet dough. Press out into pizza dough shape on parchment (not wax) paper using your hands; I made mine rectangular.. bake for 35-40 minutes until golden brown.. and then cover with toppings, slice and serve!!! Dang, you’re gonna love it
