I found some monk fruit sweetener there and wanted to try it when I got home. I also had bacon that needed to be cooked, so here ya go! It’s really good! My daughter said weirdly good.?I’ve always been a fan of sweet salty food. I used to make candied pecans with real sugar and this is the same mixture without the sugar. Thick bacon would probably work best for this recipe. # 8 slices bacon (I used thick cut) 1/2 cup pecans, chopped 1/4 cup granular sweetener (I used monk fruit/erythritol mixture) 1/2 teaspoon pure vanilla extract 2 egg whites # Preheat oven to 375 degrees. Mix pecans, sweetener, vanilla and egg whites until the mixture is frothy. Place bacon on a parchment lined sheet pan. Evenly spoon pecan mixture over each bacon slice. **baking time will vary I baked it for 25 minutes. How long it takes depends on how thick your bacon is and how crispy you like it. I checked mine every few minutes to make sure it didn’t burn on top. Let it sit for 10 minutes then drain excess grease. It will get crispier as it cools. ? Note- whatever sweetener you use make sure it’s granular to get the right consistency
